This is a 'semi-traditional' Spanish Basque-style fresh chorizo with red wine, lemon, garlic, and just, like, ALL the paprika, man. Hot paprika, smoked paprika, Hungarian sweet paprika, and just for kicks some ancho as well, making it a touch spicy. (Please note, proper Spanish chorizo is a dried sausage, while this is a fresh style interpretation.)

Recommended Side Dish Accompaniment: Anything cheesy, like Mac and Cheese or as a pizza topping. Also simple saffron rice and grilled veg. Or try it with breakfast crumbled into scrambled eggs.
Recommended Drink Pairing: A medium-to-full bodied Spanish red like a Garnacha-based blend, or a Primitivo from Italy. Or an off-dry German Riesling with some nice lemon-y flavour.
