Medister. For Danish people this sausage needs no introduction, but odds are you're likely not of Scandinavian descent, so here's the skinny. This is a mild onion sausage with a fine grind, and flavours of allspice, nutmeg, coriander, ginger, and clove. Enjoyed all year round, Medister (or Medisterpølse) is a true comfort food typically shared during a get-together with good friends, family, and probably a wet dog somewhere in the midst.

Suggested Drink Pairing: A crisp pilsner beer would be best, but if you can get your hands on it (not impossible here in Ontario) try pairing this sausage with mead.
