Lincolnshire sausage is a classic English style that's simple by design and a recipe you deviate too much from. Sage is the primary flavour here, with some summer savory backing it up and a light blend of spices in the background. (Note: British sausages are commonly made with rusk or breadcrumbs, but this recipe did NOT include these ingredients because we're all killer and no filler, and besides, we are all gluten-free, all of the time.)
Recommended side dish pairing: If we didn't recommend making Bangers and Mash with this one someone would be out for our blood. Mashed potatoes, peas, fried onions, and brown gravy, and you'll be in Happytown. If you want to double down on the British fare, take the meat out of the casing, buy some ready-made pastry, wrap and bake for amazing sausage rolls.
Recommended drink pairing: We'd be remiss if we didn't recommend a nice bitter or ale to go along with this, but another great option would be French Syrah, as this pairs very well with sage and other herbs like it.
